when I had to update my resume a couple of years ago, it was suggest at that time only to include 5 -7 years.
Employers will be interested in how long you were at any particular job to determine your dedication. They don’t like “job hoppers” who move from company to company every few years. So it is a good idea to put down the general dates of employment at each company (month & year of start to month & year of end). But you do not have to list every single job you’ve had in your adult career. I would recommend listing the last job you held (the 16-year duration) and the job you held before that. This approach will not blatantly expose your age.

The dates would be a good idea to mention. As long as you have the dates that run into each other, or hide the gaps then you’re fine.
Even if you hide your date of birth and age, you cannot hide your experience. This is sure to reveal your age. Please try for jobs where experience and Not age is the criterion.
